Austin's Famed Paperboy Restaurant to Open in West Highland

The award-winning daytime concept puts down Denver roots in early 2026
DENVER (October 2, 2025) – Austin-based Paperboy announces the opening of their third location (3490 W. 32nd Avenue Denver, CO 80211) in Denver’s West Highland neighborhood in early 2026. Known for its playful take on casual daytime dining — featuring breakfast, lunch, coffee, and cocktails — this marks Paperboy’s first expansion outside of Texas.
Behind Paperboy are founder Ryan Harms, a seasoned hospitality professional with over a decade of experience, and Executive Chef Pat Jackson, who has relocated to Denver to lead the team’s new location. Harms and Jackson met 10+ years ago while helping open The Lark with Acme Hospitality in Santa Barbara, later rejoining forces to bring the Paperboy concept to life in Texas. Chef Jackson brings a lifelong passion for restaurants, having worked nearly every position in the industry since age fifteen.
“Colorado has always felt like a second home — I’ve spent years snowboarding in Breckenridge and enjoying the outdoor recreation. Now, being able to share that lifestyle with my family while opening Paperboy’s location here in Denver is a dream come true,” says Chef Jackson. “I’m incredibly excited to put down roots in Denver, not just as a chef, but as an active member of this inspiring food and beverage community, collaborating with local chefs, supporting neighborhood events, and finding ways to give back to the purveyors that make this city so special.”
Paperboy first opened in 2015 as a food trailer on the city’s burgeoning east side before evolving into a brick-and-mortar restaurant in 2020. Voted “Best Brunch” by readers of Austin Monthly and The Austin Chronicle, the brand has since expanded to a second Austin location this past summer. The Paperboy name is a playful nod to early risers everywhere — a nostalgic symbol of the restaurant’s focus on daytime dining and community connection.
“Our mission at Paperboy has always been to create meaningful connections by making great food and taking good care of people. West Highland feels like the perfect fit for Paperboy—it's not only adjacent to downtown but it also embodies the tight-knit sense of community that inspired our journey from the very beginning,” said founder Ryan Harms. “We look forward to fostering a fun and welcoming environment for both our staff and guests.”
Aiming to be a welcoming gathering place, the light-filled and modern 3,000-square-foot space will feature 75 indoor seats plus a 20-seat patio. Kempt Studio, also behind the design of Paperboy’s Texas locations, will incorporate thoughtful details like lush greenery, natural textures, and curated artwork to bring warmth and personality to the space.
The menu will showcase playful spins on nostalgic daytime favorites made with high-quality, locally sourced ingredients and house-made components. Favorites that have earned a devoted Austin following include the Texas Hash, Migas, and signature Paperboy Pancake with brown butter — will make their Denver debut, alongside shareable dishes like Poblano & Cheddar Biscuits and seasonal Pop Tarts. Paperboy plans to establish partnerships with local producers, which reflect the restaurant’s commitment to thoughtful sourcing and quality.
Beyond the food offerings, the beverage menu features specialty coffee drinks and espresso beverages, creative cocktails and mocktails featuring housemade syrups and seasonal ingredients, local beers, and fresh-squeezed juices.
