Denver, Meet Paperboy: Austin's Award-Winning Breakfast Spot Opens in West Highland on March 24

The breakfast and lunch concept that won over Austin is ready to do the same in Denver

DENVER, CO  (March 12, 2026)—Paperboy, the Austin-based restaurant celebrated for its vibrant approach to daytime dining, is heading north. The brand will open its third location—the first outside of Texas—at 3940 W. 32nd Avenue in Denver's West Highland neighborhood on March 24.

Paperboy got its start in 2015 as a food trailer on Austin's east side before graduating to a brick-and-mortar location in 2020. The restaurant earned "Best Brunch" honors from both Austin Monthly and The Austin Chronicle, and opened a second Austin location last summer. The name itself is an homage to early risers and the communities they belong to—a nod to a time when mornings felt slower and more intentional.

Founded by hospitality veteran Ryan Harms, Paperboy has spent over a decade building a devoted following around a simple idea: that breakfast, lunch, coffee, and cocktails deserve the same care and creativity as any fine dining experience— without the fuss. For two-thirds of the leadership team behind Paperboy, Denver is already home. Executive Chef Pat Jackson, who shaped Paperboy’s culinary identity in Austin, lives nearby to lead the new kitchen. Longtime business partner Robert Brown, a Denver local of nearly a decade, has long believed that this community-oriented neighborhood is where Paperboy Denver should plant its roots. 

"We love this neighborhood because it’s still close to downtown but has its own unique and relaxed vibe," says Brown. "People know their neighbors, they show up to community events, they're invested in this place in a way that feels increasingly rare. That sense of connection is something Paperboy has always tried to foster, and we're honored to be a part of it here in Denver."

The Denver location will nestle in a sun-drenched, 3,000-square-foot space with 75 indoor seats and 20-seat patio. Returning design firm Kempt Studio brings the same soul that made Austin feel like home, with natural textures and curated artwork that makes every wall worth lingering over. Expect the same welcoming warmth wrapped in Paperboy’s signature blue and butter yellow. 

The menu is a love letter to the dishes that built Paperboy's reputation. Brunch staples anchor the lineup—the Chicken & Biscuit drizzled with spicy honey, the Texas Hash (roasted pork, sweet potato, onion, kale, poached egg, and pecan mole) that's been a fan favorite since the food truck days, and the Paperboy Pancake, a cake-forward cornmeal pancake that still manages to be impossibly fluffy. Shareables like the Chorizo & Potato Empanada and Cinnamon Toast are made for the table, while sandwiches like the B.E.C.—smoked bacon, house-made pimento cheese, jalapeño jam, arugula, and a sunny egg—hold their own as a meal worth building your morning around. Rotating specials will highlight local producers and seasonal ingredients, keeping the menu feeling fresh and rooted in the community. And if the regulars have anything to say about it: don't skip the cheddar hashbrown.

“Cinnamon toast was the breakfast of my childhood, and this is my ode to it,” says Jackson. “We've taken that familiar comfort and elevated it with whipped mascarpone icing, walnut streusel, and flaky salt—sweet, decadent, and deeply satisfying."

The beverage program includes local coffee and a solid cocktail lineup. Highlights include the Paperboy Paloma and Uncle Jesse, a rum-forward pour with orange, pineapple, orgeat, and Crème de Banana. For those skipping the spirits, the restaurant’s mocktails are equally thoughtful—Strawberry Patch is a blend of strawberry basil shrub and sparkling water, and the Lost & Found, features Pathfinder N/A spirit, apple cider vinegar, basil, lemon, ginger beer, strawberry, and cucumber.

The Denver location will open March 24 at 3940 W. 32nd Avenue, Denver, CO 80212.

Paperboy Denver will be open seven days a week:

  • Monday-Thursday: 8 a.m. to 2 p.m.

  • Friday-Sunday: 8 a.m. to 3 p.m.
