New summer cocktails, shareables, and evolved vision brings the Beach on Broadway back to a cocktail-forward destination

DENVER (June 9, 2025)—Adrift Tiki Bar, a South Broadway bar most known for its imaginative, island-inspired beverage program and immersive atmosphere, is dialing back in order to move forward.

“Over the past several years, the restaurant has implemented necessary price increases to navigate an increasingly challenging operating landscape,” says Adrift Owner Loren Martinez. “In response to the continued rise in food and labor costs across the hospitality industry, Adrift has now made strategic changes to enhance guest value without compromising on quality.”

This summer, Adrift has pared down its food menu—phasing out a few entree items but keeping fan favorites, like Island Bowls, while focusing on bold, shareable plates that optimize kitchen operations and reduce overhead. The result is lower cocktail prices, an even happier happy hour, and the debut of a vibrant lineup of summer cocktails and bites.

New summer cocktails from the Adrift bar include:

  • Adrift Signature Cocktail: Top secret!

  • El Diablo: Espadín Mezcal, Blanco Tequila, Raspberry Eau de Vie, black currant, ginger, lime, and bubbles

  • House Shot: Overproof Jamaican rum, fermented pineapple, Amaro, lime acids, and shiso

  • Orchids of Hawaii Punch Bowl: Local vodka, yuzu, bergamont, marigold, Lii Hing Mui, and citrus

Guests can enjoy shareable eats from such as Volcano Fries, Spam Musubi, Coconut Shrimp, and Poke Nachos. Adrift has also launched the following new shared plates:

  • Shitake Wontons: Fried wontons filled with shiitake mushroom, bok choy, and shredded carrots. Served with scallions and your choice of Thai Chili sauce or Pineapple Teriyaki

  • Crispy Tofu Sliders: Battered fried tofu, sumiso slaw, and King’s Hawaiian roll

  • Grilled Jerk Chicken Sliders: Grilled jerk chicken, sriracha slaw, and King’s Hawaiian roll

  • Sticky Tiki Wings:Fried chicken wings, mango, fresno chili, peanuts, green onion, and your choice of sauce (Honey Gochujang, Jamaican Jerk, Thai Chili)

  • Plus more food items to be added later this month, think Guava Baby Back Ribs, and more!

“Adrift has been a tropical hideaway for the past 16 years,” says Martinez. “We’re committed to maintaining the magic while ensuring long-term sustainability for our team and patrons.”
